They use 3 different apples to create the Brandy. Ageing in some ex wine casks adds a touch of acidity. Some of the sweetness comes from some of the spirit being aged in former fortified wine casks. A nose of baked and stewed apples. Touch of acidity helps add balance to the sweet tarte tatin flavours. Long finish, perfect neat.
