Most fruit was de-stemmed and fermented on skins for five days (with some fruit fermented as whole bunches)

The cool 2023 vintage resulted in wines with great intensity and depth

The resulting wine was then pressed to older French oak and rested just under ten months on lees before racking and bottling

The fruit was picked, de stemmed, then pressed directly into mostly older French oak (a mixture of Hogs Head and Puncheon sizes) for wild yeast fermentation. The use of seasoned oak enhances texture, without adding an oaky flavour.
