2015 La Cantina di Enza – Padre – Taurasi – DOCG Francisi Juicy and tart with pronouncedPadre is the flagship Taurasi from La Cantina di Enza, a small organic and biodynamic estate in Montemarano, in the volcanic hills of Irpinia. It is made entirely from Aglianico grown in the winery's highest vineyards, hand harvested and left to ferment spontaneously for twenty to thirty days without temperature control, drawing out the grape's full depth of colour and tannin. The wine then ages for three years across large chestnut barrels, spent oak
